My husband and I both have family recipes that we treasure. When our son was diagnosed with his food allergies, we had to push many of those recipes down to the bottom of the shelf because they had so many ingredients that were unsafe for Caleb…until now. This project that I have started will really help me try to make old recipes new and, most importantly, safe for our entire family to eat. Apple Yummies have always been a favorite of my husband’s, so I knew I wanted to try to tweak the recipe so we could all enjoy it. Based on Caleb’s reaction, I would say it was a winner! His review? “Yummmmmmm!!!! I like Apple Yummies!” I hope you will all enjoy them, too!
Dairy, Egg and Nut Free Apple Yummies
2 cups diced fresh Granny Smith Apples
2 cups sugar
3 teaspoons Ener-G Egg Replacer mixed with 4 tablespoons warm water
2 cups self-rising flour
2 teaspoons cinnamon
1/4 cup unsweetened applesauce
1/4 cup vegetable oil
Pre heat oven to 350° and grease a 9×13 pan.
In a mixer, combine sugar, egg replacement, applesauce and oil until just combined. In a separate bowl, mix flour and cinnamon. Add flour mixture to wet mixture and mix. Fold in apples.
Pour batter into prepared pan and bake at 350° for 30 minutes or until a cake tester inserted into middle comes out clean.
Easy, right?? If you can have eggs, you can use two eggs instead of the egg replacer. If you can have nuts, add 1 cup of chopped nuts to batter when adding the apples.
